Jeweled Rice

Yes, making this rice is a time commitment and a labor of love. But the ingredients aren't difficult to find, and the finished dish is stunning.

Ingredients

Preparation.

Preheat oven to 350°. Spread pistachios on a rimmed baking sheet and toast until just beginning to brown, about 4 minutes. Transfer to a plate, let cool, then coarsely chop. Spread almonds on the same baking sheet and toast until golden brown, 5–8 minutes; let cool. Set nuts aside.

Place rice in a fine-mesh sieve and rinse under cold water until water runs clear. Cook rice in a large pot of boiling salted water, stirring occasionally, until grains have lengthened but are still firm, 6–7 minutes; drain and rinse under cold water. Spread rice on another rimmed baking sheet; let cool.

Meanwhile, using a vegetable peeler, remove zest from orange and thinly slice lengthwise (reserve flesh for another use). Bring sugar and 1 cup water to a boil in a medium saucepan, stirring to dissolve sugar. Add orange zest and carrots, reduce heat, and simmer, stirring occasionally, until carrots are tender, 15–20 minutes; drain and set aside (discard syrup).

Combine barberries and raisins in a small bowl and cover with hot water; let soak 10 minutes. Drain and set aside. Place saffron in another small bowl and add 1/4 cup hot water; set aside.

Heat butter and 1 tablespoon oil in a large skillet over medium heat. Add onion, season with salt, and cook, stirring often, until soft and beginning to brown, 8–10 minutes. Add cardamom, cumin, turmeric, and 1 tablespoon saffron mixture. Cook, stirring constantly, until fragrant, about 1 minute.

Reduce heat to low, add barberries and raisins, and cook, stirring often, about 3 minutes. Stir in reserved nuts and orange zest and carrot mixture; season with salt. Set fruit and nut mixture aside.

Heat remaining 3 tablespoons oil in a large wide heavy pot over medium heat. Add half of rice, spreading evenly; top with fruit and nut mixture, then remaining rice, spreading evenly. Using the end of a wooden spoon, poke 5–6 holes in rice all the way through to bottom of pot (to help release steam and help rice cook evenly).

Drizzle remaining saffron mixture over rice. Place a clean kitchen towel over pot, cover with a tight-fitting lid, and secure loose edges of towel on top of lid, using a rubber band or masking tape.

Cook until pot begins to steam, 5–8 minutes. Reduce heat to very low and cook, without stirring, until rice is tender and bottom layer of rice is browned and crisp, 30–40 minutes.

Scoop rice into a wide serving bowl, breaking bottom crust into pieces.

DO AHEAD: Fruit and nut mixture can be made 2 days ahead. Cover fruit and nut mixture and remaining saffron mixture separately and chill.

A killer side-dish. Firstly, relax. It requires some prep. Secondly, start a bit early. The result will be excellent, and will las beyond one meal. I rarely used the saffron (I used it twice) but survived fine without it, the other times. If missing basmati rice ingredient, you're still okay. There are a lot of flavors bouncing around this, in any case. Everything else is necessary. It will leave your kitchen smelling great, no matter how it turns out. (Rice, sometimes, was "al dente," other times, perfect) Add water/broth, if end result is too hard. Cook a bit longer, covered. It has never failed in my kitchen, if followed by its steps.

The flavor of this dish was DELICIOUS! Unfortunately, my rice came out very undercooked, based on the instructions for how long to boil the rice (step 2) at the beginning. Next time I'll boil the rice for longer at the beginning. Otherwise, I found the recipe pretty straightforward (although there are a lot of steps) and was incredibly flavorful.

Jewelled rice pilaf – for easter.

Named as such for the sparkling colours, this is a striking rice pilaf that is made for festive occasions – like Easter! It’s a bright yellow Persian saffron rice that’s flavoured with spices and mixed with a jumble of fruit and nuts. Stunner to look at – and eat!

There are many rice dishes on this website, but this is the crown jewel of them all. Just LOOK at that colour! And the flavour – WOW. It’s a fruit-nut pilaf delicately perfumed with traditional Persian spices – cumin, fennel, cinnamon, all spice and cardamom – with that unmistakable, intoxicating scent and bright yellow colour that you only get from the world’s most coveted spice: saffron.

While this Persian /Middle Eastern rice is flavoured enough to make you want to eat it straight out of the pot, the flavour is still mild enough so it’s suitable to serve alongside bold flavoured mains. Think – Persian Lamb Shanks , Chicken or Lamb Shawarma , lamb koftas , chicken or vegetable tagine. For more, see here for all Middle Eastern recipes. Also, Mediterranean food will pair beautifully and I certainly wouldn’t hesitate to serve this alongside a roast chicken or a roast lamb.

Saffron – This is an exotic spice used in Middle Easter / Persian cooking. It’s famous for being the world’s most expensive spice, reflecting the labour intensive production. There’s 3 tiny strands in each flower which blooms for only one week every year!

Saffron makes anything it touches a bright vibrant yellow with a subtle perfume of earthy flavour unlike anything other spice.

Find it in large grocery stores (here in Australia), Middle Eastern/Persian stores and online.

Better value substitutes – I freely use turmeric in place of saffron, for a similar yellow colour albeit it doesn’t have the same flavour. Imitation saffron powder will provide the colour but doesn’t provide flavour. To be honest, there’s plenty of other flavour in this pilaf from the spices, so it’s actually fine to use imitation.

Spices – Cumin and fennel seeds, cardamom, all spice and a cinnamon stick. This is a combination of spices that reflects the Persian / Middle Eastern roots of this pilaf.

Note: I choose to use cumin and fennel seeds and a cinnamon stick rather than powder because you end up with a more vibrant yellow rice. If you use powder then the rice ends up a slightly brown colour so when you add the saffron, it’s a slightly more muddied yellow colour.

Bay leaves – Aromatic added to cook the rice.

Lemon – We use the zest only, for a perfume of lemon flavour. It adds that little touch of extra-something.

Fruit and nuts – I use almonds, pistachios, apricots, golden raisins and cranberries. This is a combination that I think provides colour (green from pistachios, orange apricots, yellow rather than black raisins) as well as a good flavour combination.

Other – You can really make this pilaf your own! Sultanas, raisins, figs, peach, cherries, mangoes, pineapple all would work here. For nuts, I’d suggest walnuts, cashews, macadamias and non-nuts like pepita. Peanuts would be a little out of place, I think.

The rice part

No less important but let’s face it, not as exciting as all the add-ins. 😊

Ingredients in Jewelled rice pilaf

Basmati rice – this is the traditional rice for pilafs. The rice grains are distinctively long with a perfume of flavour.

Other rice that will work – long grain and jasmine rice. Medium grain rice will also work though the rice will be a touch stickier (because that’s how the rice is).

Please do not use: wild rice, risotto, paella rice, brown rice or faux rice (quinoa, cauliflower rice etc).

Ghee is a type of clarified butter that has a more concentrated butter flavour because it’s 100% fat. Stored in pantry not in fridge. Make your own or just use butter.

Onion and garlic – Flavour base aromatics.

Stock rather than water, for better flavour. I use vegetable stock to keep this vegetarian but chicken stock works great too.

Grind the saffron threads into a powder. This extracts more flavour and colour out of it – we want to do this for the world’s most expect spice!!! If you don’t have a mortar and pestle that’s ok, just soak the strands, it will still work.

Soak – Add a bit of boiling water and mix. Set aside to steep while the rice cooks, and the colour will intensify.

It’s no harder than making plain white rice , except we start with sautéed aromatics that adds so much flavour to the end result!

How to make Jewelled rice pilaf

Sauté the fennel and cumin seeds first. This brings out their flavour. Then cook the onion and garlic for 5 minutes until the onion is translucent. And lastly, add the cinnamon stick, cardamom and all spice powder and stir for 30 seconds – again, to bring out their flavour.

Coat rice – Add the rice and give it a good stir to coat the rice grains in all those tasty flavours.

Cooking liquid – Add the stock, bay leaves, lemon, salt, fruit and nuts.

Steam rice – Stir, bring to a simmer, then put the lid on. Reduce stove to low – but it should still be simmering gently around edges otherwise the rice is just sitting there, getting bloated in hot water. Cook for 14 minutes or until the liquid is all absorbed. Do not peek or stir while it’s cooking!

How to make Jewelled rice pilaf

Rest – Remove the saucepan from the stove with the lid still on and set aside for 10 minutes. During this resting stage, the rice grains will finish cooking and the residual water on the surface of each grain gets absorbed, leaving you with fluffy rice rather than gluey mushy rice.

Cooked rice – This is what it looks like when you remove the lid. The rice surface will be level and the colour is a light brown. We will fluff and colour it up in the next steps!

How to make Jewelled rice pilaf

Saffron water – Pour over half the saffron water.

Gently fluff the rice using a rubber spatula. Be very gentle! The long rice basmati rice strands are fragile, we don’t want to break them.

Repeat – Once the rice is fluffed and is mostly yellow (some white spots still expected at this stage), pour in the remaining saffron water plus the melted ghee or butter. Then gently toss again until the rice is all yellow.

Sparkling jewels! Tumble the rice onto a serving platter then sprinkle with pomegranate seeds, pistachios and coriander. Then serve!

Fish mixed with spices then skewered and pan fried, this is a new recipe created especially to rest atop of a big pile of this fluffy saffron rice, a magnificent Easter Friday-worthy meat-free main. You’ve never had fish like it before – and it’s so easy!

Ingredients

Saffron water:.

  • ▢ 1/2 – 1 tsp saffron threads (125 – 250mg) (SUB: 1/4 tsp saffron powder OR 1/2 tsp tumeric powder) (Note 1)
  • ▢ 2 tbsp boiling water

Rice pilaf:

  • ▢ 2 tbsp (30g) ghee or butter (Note 2)
  • ▢ 1/4 tsp fennel seeds
  • ▢ 1/4 tsp cumin seeds
  • ▢ 1 onion , finely diced
  • ▢ 2 garlic cloves , minced
  • ▢ 1 cinnamon stick
  • ▢ 1/8 tsp all spice
  • ▢ 1/8 tsp cardamom powder
  • ▢ 1 1/2 cups basmati rice (Note 3)
  • ▢ 2 1/4 cups vegetable stock , low sodium (or chicken)
  • ▢ 3/4 tsp cooking/kosher salt
  • ▢ 2 bay leaves (preferably fresh, else dried)
  • ▢ 1/2 tsp lemon zest

Fruit & nuts (your choice, Note 4):

  • ▢ 1/4 cup dried cranberries
  • ▢ 1/4 cup dried apricots , cut in 1cm / 1/3″ pieces
  • ▢ 1/4 cup golden raisins
  • ▢ 1/4 cup pistachios , toasted (Note 5)
  • ▢ 1/4 cup slivered almonds , toasted (Note 5)
  • ▢ 2 tbsp (30g) ghee or butter, melted
  • ▢ 1/2 pomegranate , seeds only (Note 6)
  • ▢ 2 tbsp coriander/cilantro leaves roughly chopped
  • ▢ 2 tbsp roughly chopped toasted pistachios (Note 5)

Instructions

  • Soak saffron – Grind saffron into a powder using a mortar and pestle (Note 1). Mix in boiling water then set aside while the rice is cooking.
  • Sauté – Melt ghee or butter in large saucepan over medium high heat. Add fennel and cumin, then stir for 30 seconds. Add onion and garlic. Cook for 5 minutes. Add cinnamon, cardamom and all spice, then stir for 30 seconds. Add rice and stir for 1 minute to coat in the beautiful flavour.
  • Cook rice – Add the stock, bay leaves, lemon, salt, fruit and nuts. Stir, bring to a simmer, then put lid on. Reduce stove to low (should still be simmering gently around edges), and cook for 14 minutes. Do not peek or stir!
  • Rest – Quickly check to ensure liquid is absorbed. Remove from the stove (lid still on) and leave for 10 minutes.
  • Yellow! Pour over half the saffron water then very gently fluff the rice using a rubber spatula (so you don't break the long rice strands). Once mostly mixed through, add remaining saffron water and ghee. Gently toss until the rice is all yellow.
  • Serve – Tumble onto serving platter. Sprinkle with pomegranate seeds, coriander, pistachios and serve with fish koftas .

I made your Jewelled Rice Pilaf tonight. The flavour & texture of your recipe is far better than the sadly underwhelming pilaf recipe I have muddled along with for over 20 years… that old recipe is going in the bin; there’s a new player in town! 😎👍

My pilaf didn’t colour up as brightly as yours (my saffron was old – might that be why…?) but oh my, the fragrance & flavour released by crushing the threads, & adding the saffron in the water after cooking & resting the rice, both of which I have not done before, is a total Pilaf game changer.

I was impressed with how the saffron water made the finished texture of the pilaf beautifully moist, but not gluggy in any way.

I forgot to add extra dairy free margarine to finish the rice (I’m strongly lactose intolerant & can’t do even lactose free butter), but I don’t think the finished dish has suffered due to its omission.

I teamed the jewelled rice with homemade beef & pork mince koftas, just seasoned with a packet of commercially made Lebanese Kofta seasoning mix (oops, heresy!).

Referring to your Fish Kofta recipe tip where you mention that grated/ finely diced onion helps keep the fish koftas moist, I added finely processed onion to my kofta mixture before blitzing my mince mixture in the food processor.

My beef & pork koftas cooked up with the most divine level of moistness like they have never done for me before. No egg needed. Another game changer. 😎👍

I plan to try your fish kofta recipe next week. Shall have to make more of your jewelled pilaf with fresh saffron! 😉🌹

Absolutely amazing . I thought cooking the fruit and nuts would give it a stogie taste but it was sweet light and gorgeous . Persian Jeweled Rice

Persian Jeweled Rice

This dish is called jeweled rice because it is golden and glistening, laced with butter and spices and piled with gem-colored fruits. Some of the ingredients called for may require some effort to find, but you can make substitutions. If you cannot get dried barberries (imported from Iran), you will need dried cherries or goji berries or dried cranberries. You will also need some extra-fancy Basmati rice. One goal in making this dish is to achieve the crisp buttery layer on the bottom of the pot. The technique is not difficult, but it takes a little practice. After the rice is rinsed well, it is parboiled for about 5 minutes and drained. The half-cooked rice is layered into a well-buttered pot along with the chopped dried fruits. Over a moderate flame, it is allowed to brown gently before being splashed with a small amount of saffron-infused water. Then the lid goes on the pot and the heat is turned very low so the rice steams gently. With a little luck and experience, the crisp tah dig, or crust, is formed. —Harvey Araton

  • 4 cups high-quality basmati rice
  • black pepper
  • Pinch of high-quality saffron threads
  • Pinch of sugar
  • 1 tablespoon butter plus 4 ounces (1 stick) butter, melted
  • 1 tablespoon vegetable oil
  • 3 to 4 waxy potatoes, peeled and cut into ½ -inch slices
  • 1½ cups barberries (see note)
  • ½ cup slivered almonds
  • ½ cup slivered pistachio nuts
  • ½ cup chopped candied orange zest

Preparation

Rinse basmati rice until water runs clear. Place in a bowl, cover with water and add 1 tablespoon salt. Allow to soak for at least 4 hours or overnight.

Using a mortar and pestle, grind together saffron and sugar. Combine with a scant ⅓ cup boiling water, and set aside to steep. Bring a stockpot of lightly salted water to a rolling boil. Drain rice and add to pot; cook exactly 6 minutes, then drain into fine-meshed colander.

Place a round Dutch oven or other wide pan with a lid over medium heat. Add 1 tablespoon butter and vegetable oil. When butter has melted, add potato slices in a single layer. Season to taste with salt and pepper. Spread potatoes evenly with a layer of rice about 1 inch thick. Sprinkle 1 cup barberries in stages over rice. Continue to add rice in smaller and smaller layers, sprinkling barberries between each layer, to make a pyramid of rice with no berries on top.

Using the handle of a round wooden spoon, poke 3 holes into top of rice until spoon touches potato layer. Combine melted butter with saffron mixture, and pour all over rice. Cover underside of pot lid with a large dry cotton kitchen towel. Place on pan, making sure no ends dangle near source of heat.

Cook rice mixture over medium-high heat for 5 minutes, then reduce heat to low. Cook 40 to 45 minutes. To serve, spoon rice onto a heated serving platter. Top with rows of almonds, pistachios, candied orange zest and remaining ½ cup barberries. Arrange potatoes from bottom of pan in another dish, and serve alongside rice.

My mother and my husband both make this and it is excellent. Always much appreciated by guests. Tonight we made it with dried cherries and a few leftover cranberries in place of barberries, raisins in place of candied orange zest, and no potatoes. It was a great complement to the Oven-Roasted Chicken Shawarma recipe by Sam Sifton.

I usually like to use the original ingredients if at all possible. Got some dried barberries today. Note to cooks who can't find them: they taste almost identical to a dried UNSWEETENED cranberry. Just more like the size of a currant. Don't hesitate to substitute.

This is the recipe I use but without the potatoes as we like the crunchy rice on the bottom and sides. Found this Persian rice recipe in Cook's magazine a year ago and we love it. In fact, we love it so much I bought a 20 lb bag of basmati rice recently. Was thrilled to find it as the smaller bags are pricey.

I made this Shirin Polo exactly to recipe and I cannot recommend it enough. It is one of the most delicious things I've ever made and I'm a pretty OK cook. I had purchsed boxed Shirin Polo before and it was gross, so I was leery of making this, but it's incredible. Get barberries if you can - they are not identical in taste to cranberries as some assert here - I tasted both and there's a lighter, more nuanced flavor to the baberries which I find most suitable for persian recipes. so good!!

Can this be made vegan? Would margerine work?

I wanna make this dish with roasted chicken but I'm skeptical about the candied orange zest. it seems like it would be too much of a mash up of flavors....esp with chicken. does anyone have any advice regarding this?

I made my rice in the rice cooker. Yes, it’s a cop out but my rice cooker is top of the line and makes perfect rice. If you don’t have a rice cooker, then you can bring 3 cups of water, the turmeric and your choice of spices to a boil. Stir in 1 1/2 cups of long-grain basmati rice and return to a boil. Cover, turn the heat to a low simmer, and cook for 20 minutes. Turn the heat off, stir the rice, cover it again, and let it steam for about 10 minutes. You should have perfectly fluffy rice ready to be adorned with jewels.

A funny story about the pistachios. For some reason, I do not pay attention when ordering pistachios for my grocery pick up. I always get the pistachios in the shell. So, there we were, my husband and I, standing in the kitchen shelling pistachios to put in this jeweled rice. Ingredients

  • 2 cups water
  • 1 cup coconut milk
  • 1 teapsoon turmeric
  • 1 teaspoon cumin
  • 1/4 teaspoon cardamom
  • 1 1/2 cups basmati rice
  • 4 tablespoons butter
  • 1 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 3/4 cup chopped pistachios
  • 1/2 cup chopped dried apricots
  • 1/2 cup dried cranberries
  • 1/2 cup pomegranate pearls

Instructions

  • Bring the water, coconut milk, turmeric, cumin, and cardamom to a boil in a medium saucepot with a lid. Stir in the rice, reduce the heat, and simmer for 20 minutes. Turn off the heat, remove the lid and stir the rice. Put the lid back on and let the rice steam for 10 minutes.
  • Fluff the rice and stir in the butter, garlic salt, and black pepper. Fold in the chopped dried apricots, dried cranberries, chopped pistachios, and pomegranate seeds. Garnish with chopped green onions or parsley before serving.

Gorgeous and truly bejeweled with a host of colorful pieces of dried fruit and fresh orange peel, jeweled rice brings a brilliant ray of sunshine to the dinner table. In Iran, jeweled rice—or javaher polow —is traditionally served at weddings and other, similarly blow-out celebrations and we can see why! The dazzling, gem-like colors of the fruits and nuts dotting a pot of generously spiced rice, tinted yellow from the turmeric, just feels so festive. But, just because it’s often served as part of a once-in-a-lifetime feast doesn’t mean you should limit yourself to only making it sometimes. We’ve found that jeweled rice goes with so many things! Its sweetness and warm spice brings a lot of excitement to otherwise simple meals, making it ideal for serving to company, or even just your own household on a night that calls for a meal that’s just a bit more exciting than spaghetti.

What’s In Jeweled Rice?

In our jeweled rice recipe, we’ve made some allowances in favor of using ingredients that are easily available—in other words, we’re skipping the dried barberries that are a traditional ingredient in Persian jeweled rice. These tart little dried berries are a classic jeweled rice ingredient, but they can be hard to find. Instead, we used a blend of dried fruits called the Traina Foods All-American blend , which has sun-dried peaches, dried apples, dried cranberries, golden raisins, and dried blueberries. Plenty of sweet, colorful, tart jewels, no wild goose chases! Here’s everything you’ll need to make this easy jeweled rice recipe:

  • Orange zest
  • Raw pistachios
  • Sliced almonds
  • Basmati rice
  • Spices: turmeric, cumin, cinnamon, allspice
  • A blend of your favorite dried fruits

How To Make Jeweled Rice

So, when we say this is an easy jeweled rice recipe, we do mean it! But it’s not zero work. If you’re looking for zero work, plain steamed rice is probably a better way to go. But for just a bit of work—not a ton—you can have a really show-stopping side dish. Our jeweled rice recipe is also a bit easier than most, and the payoff is certainly worth the effort. Here’s how to make it:

  • Candy the orange peel. Boil the zest in sugar water, drain.
  • Dry-toast the almonds and pistachios until slightly golden.
  • Sauté shallots, then add the basmati rice to the shallots and sauté.
  • Time for spices! Add the salt, turmeric, cumin, cinnamon, allspice to the pan.
  • Pour in water and the orange peels, and bring the mixture to a boil.
  • Simmer, covered, for 20 minutes.
  • Remove from heat and stir in the dried fruit and nuts.
  • Pop the lid back on for 10 more minutes.

What To Serve With Jeweled Rice

A dish this complex in flavor doesn’t go with everything, but it is more versatile than you might imagine. With its bright colors and textures, not to mention that lovely hint of sweetness, it’s an easy partner for simply cooked foods or, of course, many Middle Eastern dishes. We think it’d be lovely served with:

Ingredients

  • 1/3 cup sugar
  • 1/4 cup raw pistachios, unsalted, shelled, roughly chopped
  • 1/2 cup sliced almonds
  • 2 Tbsp olive oil
  • 1 large shallot, chopped
  • 2 cups basmati rice, rinsed
  • 1/2 tsp sea salt
  • 1 tsp ground turmeric
  • 1/4 tsp ground cumin
  • 1/4 tsp ground cinnamon
  • 1/4 tsp allspice
  • 6 oz dried fruit such as cranberries and raisins
  • chopped parsley for serving
  • Using a citrus stripper, vegetable peeler or sharp knife remove the zest from the orange (taking care to just get the orange part and not the white part, which will be too bitter). If using a knife or vegetable peeler, slice the zest into thin srips. Add it to a small saucepan along with 1 cup of water and ⅓ cup sugar. Bring to a boil over high heat, then reduce heat to low and simmer for 7-10 minutes, drain and set aside.
  • In a 3 quart dutch oven or soup pot, set over medium heat, dry toast the almonds and pistachios until slightly golden about 5 minutes. Remove from pan, set aside.
  • Heat the olive oil in the same pot. Add the shallots and cook until tender, about 5-7 minutes.
  • Add the rinsed rice to the shallots and sauté until opaque, about 2-3 minutes. Add the salt, turmeric, cumin, cinnamon and allspice to the pan and sauté for 1 minute, until fragrant. Pour 4 cups of water over the rice mixture and stir in the orange peels. Turn the heat to high and bring to a boil then reduce the heat to low, cover with a lid, and cook for 20 minutes until rice is tender and all the liquid has been absorbed.
  • Once cooked, remove from heat and add the dried fruit and nuts. Put lid back on and allow to rest for 10 more minutes. Serve warm topped with fresh parsley.

Jeweled Rice

Jeweled Rice

  • ▢ 250 g Rice Basmati
  • ▢ 400 ml Water
  • ▢ 50 ml Oil
  • ▢ 1 Onion Finely chopped
  • ▢ 1 Carrot Peeled and julienne
  • ▢ 2 cloves Garlic Minced
  • ▢ 1 tsp Salt
  • ▢ ¼ tsp Turmeric Powder
  • ▢ ¼ tsp Cumin Powder
  • ▢ ½ tsp Cardamom Powder

Fruit and Nut Mixture

  • ▢ 50 g Butter Unsalted
  • ▢ 30 g Pistachios Unsalted
  • ▢ 30 g Almonds Slivered
  • ▢ 30 g Raisins
  • ▢ 30 g Pomegranate Seeds

Saffron Mixture

  • ▢ ¼ tsp Saffron Threads
  • ▢ 50 ml Water

Instructions

  • Rinse the basmati rice in cold water and set aside.
  • Place saffron in a small bowl and add 50ml hot water and set aside.
  • In a large saucepan, heat the oil over medium heat. Add the onion, garlic, and carrot, and cook until soft and lightly browned, about 6-8 minutes.
  • Add the turmeric, paprika, cinnamon, cumin, and salt. Cook for 1-2 minutes, until fragrant.
  • Add the rinsed basmati rice to the pan, along with 400ml of water. Stir well to combine and reduce the heat to low, cover, and cook for 18-20 minutes, or until the water has been absorbed.
  • Remove from heat and let stand for 5 minutes, then fluff with a fork.
  • In a separate pan, melt the butter over medium heat. Add the pistachios, almonds, pomegranate seeds, and raisins, and toast, stirring occasionally until they are golden brown, about 3-4 minutes.
  • Stir the fruit and nut mixture into the cooked rice and drizzle the saffron mixture over the rice.
  • Place a clean kitchen towel over the pot, cover with a tight-fitting lid, and secure loose edges of the towel on top of the lid.
  • Cook until pot begins to steam, 6-8 minutes. Reduce heat to very low and cook, without stirring, until rice is tender.

Buttery Bejeweled Rice

You can fold all the toppings into the rice and it’ll still be delicious—but you’ll get maximum wow factor if you create a pattern with them on top.

Preparation.

Preheat oven to 350°F. Separate dark green parts from scallions; thinly slice dark green parts and white and pale green parts, keeping them separate. Set aside. Arrange almonds and pistachios on opposite sides of a rimmed baking sheet and toast until almonds are golden brown, about 3 minutes. Remove almonds from baking sheet and toss pistachios. Return baking sheet with pistachios to oven and toast until golden brown, about 4 minutes longer. Let cool.

Melt 3 Tbsp. butter in a large heavy pot over medium heat. Add carrots and cook, stirring occasionally, until softened but without having taken on any color, 10–12 minutes. Stir in sugar and a pinch of salt and cook, stirring, until sugar dissolves, about 1 minute. Transfer carrots to a medium bowl.

Melt another 4 Tbsp. butter in the same pot over medium. Add garlic and reserved pale green and white parts of scallions and cook, stirring occasionally, until softened but without taking on any color, about 5 minutes. Stir in rice, cardamom, cinnamon, red pepper flakes, and turmeric and cook, stirring often, until some grains are translucent, about 3 minutes. Add 1 Tbsp. salt and 3¾ cups water and bring to a boil. Reduce heat to medium-low, cover pot, and simmer until rice is tender, 25–30 minutes. Remove pot from heat; let sit 10 minutes to allow rice to steam longer.

While rice is cooking, melt 2 Tbsp. butter in a small skillet over medium heat. Add dried fruit and cook, stirring often, until fruit is plumped and softened, about 4 minutes. Set aside.

Add remaining 3 Tbsp. butter to rice and fluff with a fork. Spoon pilaf onto a large platter. Top with neatly defined rows of dried fruit, almonds, pistachios, carrots, and reserved scallion greens, or, if you prefer, mix all the toppings into the rice before arranging on the platter.

Can’t figure out what that is in the picture between the pistachios and green onions (left side)? I cut down on the butter by half and omitted the sugar (used very sweet organic carrots). Amount of water to rice depends on freshness of the rice. This recipe is similar to the curried cranberry rice one that’s been around for many years. Nice presentation.

Great, but a slightly insane amount of butter. For the dried fruit I soaked them in lemon juice instead and that cut the richness of the dish nicely

The proportions of rice and water should be 1 1/2 water for 1 of rice. Otherwise, this recipe was absolutely stunning.

Perfumed jewelled rice with marinated roast chicken

  • 3⁄4tsp saffron threads
  • 4tbsp extra virgin olive oil
  • 4 skin-on chicken breast supremes
  • 1 garlic clove, finely grated
  • 1⁄2tsp caster sugar
  • finely grated zest 2 large oranges
  • juice 1 large orange
  • 350g basmati rice
  • juice 1⁄2 lemon
  • 35g barberries or goji berries
  • 75g golden sultanas
  • 1⁄2tsp cinnamon
  • 1⁄4tsp freshly ground cardamom seeds
  • 25g toasted flaked almonds
  • 40g pistachio nibs

Crush 1⁄4tsp of the saffron lightly and put in a dish large enough to hold the chicken breasts. Add 1tbsp of the oil and put in the chicken. Rub the mixture all over and marinate, chilled, for a few hours or preferably overnight.

Retrieve the chicken breasts. Rub the flesh-side only with the garlic, then bring up to room temperature, which will take around 40 minutes.

Put the rest of the saffron in a small cup with the sugar. Add 1tbsp hot water and the juice from the orange. Leave to soak while the remaining ingredients are being prepared for cooking.

Rinse the rice. Soak in cold water and the lemon juice for 20 minutes. Put the barberries and raisins in a bowl with the spices, nuts and the orange zest and set aside.

Bring a large pan of salted water to the boil, drain the rice, add to the pan and cook on a high heat for 5 minutes. Drain the rice through a sieve and rinse in warm water. Season with crushed sea salt flakes to taste.

Ten minutes before cooking, season the chicken supremes well with sea salt flakes and freshly ground black pepper. Preheat the oven to 220C/200C Fan/Gas 7.

Put the chicken skin-side up on a foil-lined tray with any of the marinade added. Roast for around 25 minutes, until the skin is golden and cooked through. Rest it in a warm place until the rice is cooked.

Put the rest of the extra virgin olive oil in a heavy-based pan over a low heat. Spoon roughly a third of the rice into the bottom and scatter with half the berry-and-nut mixture. Add another third of the rice and scatter over the rest of the mixture and cover with the rest of the rice. Using the handle of a wooden spoon, make around 8 holes in the rice all the way to the bottom of the pan. Sprinkle over the saffron liquid. Cover the pan lid with a clean tea towel and wrap it and tie with a knot, so the cloth has no chance of catching fire.

Put the lid on the pan and cook for around 20-25 minutes, until the rice forms a crust on the bottom of the pan. Melt the ghee and pour over the rice, then return the lid.

To loosen the crust in the bottom of the pan, put the pan base into a bowl or sink shallowly filled with cold water for a few minutes and serve by scooping the rice out of the pan, leaving the crust behind. Spoon any chicken juices from the roasting tray over the rice. Using a wide wooden spatula, hack the crust from the bottom of the pan and lay it on top of the rice. Serve with the roast chicken supremes.

This gorgeous rice salad is as colourful as it is tasty. With the inclusion of ripe cherries, crispy shallots, vibrant herbs and a tangy lemon dressing, this veggie delight is impressive enough to serve to guests, but quick enough for your Meat-Free Monday !

Ingredients

Rinse the rice in a sieve until water runs clear. Transfer the rice to a medium saucepan, add 1½ cups (375ml) water and bring to a gentle simmer. Cover and cook over low heat for 10 minutes. Remove from heat, stand rice for 10 minutes then fluff rice with a fork. Transfer rice to a large bowl and add 2 tablespoons of the Lemon Dressing, toss to combine; cool.

CRISPY SHALLOTS Heat the oil in a medium saucepan over low heat. Add the shallots, cook, stirring, for 20 minutes or until shallots are deep golden brown. Strain shallots through a sieve to drain away excess oil.

LEMON DRESSING Meanwhile, combine all ingredients in a screw-top jar; shake well. Season with salt flakes and freshly ground black pepper.

Just before serving, arrange rice, herbs, cherries and Crispy Shallots on a large platter . Drizzle over remaining Lemon Dressing, toss gently. Serve with an extra pinch of sumac.

Olivier salad is a Russian salad with variable ingredients, but it is typically made with chopped vegetables, meat, and mayonnaise. The key ingredients include diced potatoes, vegetables, eggs, chicken, or ham. This salad is one of the most important appetizers at the New Year's salad buffets in Russia, as well as in some of the other countries of the former USSR. The original was invented in the 1860s by Lucien Olivier, a chef in the popular Moscow restaurant called L'Hermitage . Olivier guarded the recipe until he died, but it is believed that the recipe was stolen by an employee who watched the chef at work, so the salad is still made today. Another theory says that the recipe for the new Olivier salad was developed by one of the restaurant's customers who wanted to keep the salad alive after the chef passed away. Olivier salad as we know it today is nothing like the original version, because it was called game bird mayonnaise , made with gourmet ingredients such as black caviar, capers, hen, and crayfish tails. Over time, the salad evolved and most of the gourmet ingredients have been replaced with more common ones such as peas, chicken, ham, and pickles. Today, the variations are endless, but most Russian chefs agree on one thing: adding carrots to the Olivier is a heresy. Interestingly, Olivier salad is also sometimes called Russian salad, while the meatless version is called French salad or francuska salata , probably due to the French name of its creator. The Spanish version is known as ensaladilla rusa. It is so popular in Spain that it's an important part of the Spanish gastronomy as well as being a staple in schools and summer camps all over the country. Ensaladilla rusa is also one of Spain's most popular tapas – in some cases, it's even served free of charge if you order a beer. There's also the Piedmontese insalata russa, typically consumed as an appetizer, and with many variations, so the salad might also include ingredients such as pickled cauliflower, anchovies, and tuna. Interestingly, in the Italian municipality of Carrù, tuna is an obligatory element of the salad.

When it first appeared in the mid-19th-century Russia, beef Stroganoff was a dish made out of lightly floured beef cubes that have been sautéed and cooked in a simple sauce made from stock and mustard with only a small amount of sour cream. The origin of the dish is unclear, but it is most likely linked to a French chef—or a French-trained chef—working for the Stroganoff family. Although Russian in origin, the dish is strongly influenced by the French style of cooking—this is most obviously seen in the way the beef is cut, in either cubes or strips. The first known recipe appeared in Elena Molokhovets’s A Gift to Young Housewives, published in 1871. Since then, the dish has had major alterations. The beef is still cut in strips, but the sauce is much richer; with sliced mushrooms and onions that are cooked with beef stock and thickened a bit with sour cream that is only stirred in at the end. The dish is traditionally served with potato straws, but is often served with either rice pilav, egg noodles, or mashed potatoes.

Pirozhki is one of the most popular Russian dishes, often sold as street food, although it can also be made at home. It can be modified by numerous additions such as fresh or dried fruit, preserves, cheese, butter, vegetables, nuts, or honey. In the past, the porridge was traditionally prepared in cast iron pots and slowly baked in the oven during the night. This authentic Russian dish holds a strong symbolic meaning–it is the first solid meal served to children, and is typically served during funerals, thus symbolizing the circle of life. Varieties of the dish, prepared with different cereals, are often found in other Slavic countries such as Ukraine, Poland, and Belarus.

The addition of condensed milk probably originates from the Soviet era, while modern variations may include berries or even chocolate. The summer months (June-August) are a great time to travel to Moscow to take advantage of the enjoyable mild temperatures. This is considered peak travel season. Bear in mind that hotel prices rise along with the temperatures!

If you’re planning a trip to Moscow during fall (September-November) try to plan for early fall. This way the temperatures will still be pleasant and winter won’t be threatening.

Russian winters (December-February) are not for the faint of heart as Napoleon learned to his peril. Some days the sun will be out for less than an hour, and snow is guaranteed. Although winters are exceptionally cold, this is when you’ll get a true glimpse of the Moscow experience!

An important aspect of planning any trip is figuring out the transportation situation. You’re probably wondering how you’re going to get to all of your Moscow points of interest right? Luckily, this sprawling city has an excellent network of public transportation that will make traveling a breeze!

The underground metro system is the quickest and most efficient way to travel around Moscow. Most visitors rely exclusively on this super-efficient transportation system, which allows you to get to pretty much anywhere in the city! It’s also a great option if you’re planning a Moscow itinerary during the colder months, as you’ll be sheltered from the snow and freezing temperatures!

If you prefer above-ground transportation, buses, trams, and trolleybuses, run throughout the city and provide a rather comfortable alternative to the metro.

Moscow’s metro, buses, trams, and trolleybuses are all accessible with a ‘Troika’ card. This card can be topped up with any sum of money at a metro cash desk. The ticket is simple, convenient, and even refundable upon return to a cashier!

No matter which method you choose, you’ll never find yourself without an easy means of getting from point A to point B!

Spend the first day of your itinerary taking your own self guided Moscow walking tour around the historic Red Square! This is Moscow’s compact city center and every stop on this list is within easy walking distance to the next! Get ready to see all of the top Moscow landmarks!

Day 1 / Stop 1 – The Red Square

  • Why it’s awesome: The Red Square is the most recognizable area in Moscow, it has mesmerizing architecture and centuries worth of history attached to its name.
  • Cost: Free to walk around, individual attractions in the square have separate fees. 
  • Food nearby: Check out Bar BQ Cafe for friendly service and good food in a great location! The atmosphere is upbeat and they’re open 24/7!

The Red Square is Moscow’s historic fortress and the center of the Russian government. The origins of the square date back to the late 15th century, when Ivan the Great decided to expand the Kremlin to reflect Moscow’s growing power and prestige!

During the 20th century, the square became famous as the site for demonstrations designed to showcase Soviet strength. Visiting the Red Square today, you’ll find it teeming with tourists, who come to witness its magical architecture up close!

The Red Square

The square is the picture postcard of Russian tourism, so make sure to bring your camera when you visit! No matter the season, or the time of day, it’s delightfully photogenic! 

It’s also home to some of Russia’s most distinguishing and important landmarks, which we’ve made sure to include further down in this itinerary. It’s an important center of Russia’s cultural life and one of the top places to visit in Moscow!

In 1990, UNESCO designated Russia’s Red Square as a World Heritage site. Visiting this historic site is a true bucket-list event and essential addition to your itinerary for Moscow!

Day 1 / Stop 2 – The Moscow Kremlin

  • Why it’s awesome: The Moscow Kremlin complex includes several palaces and cathedrals and is surrounded by the Kremlin wall. It also houses the principal museum of Russia (the Kremlin Armory).

  • Food nearby: Bosco Cafe is a charming place to grat a casual bite to eat. They have excellent coffee and wonderful views of the Red Square and the Moscow Kremlin!

The iconic Moscow Kremlin , also known as the Kremlin museum complex, sits on Borovitsky Hill, rising above the Moscow River. It is a fortified complex in the center of the city, overlooking several iconic buildings in the Red Square!

It’s the best known of the Russian Kremlins – citadels or fortress’ protecting and dominating a city. During the early decades of the Soviet era, the Kremlin was a private enclave where the state’s governing elite lived and worked.

The Kremlin is outlined by an irregularly shaped triangular wall that encloses an area of 68 acres! The existing walls and towers were built from 1485 to 1495. Inside the Kremlin museum complex, there are five palaces, four cathedrals, and the enclosing Kremlin Wall with Kremlin towers.

The Armoury Chamber is a part of the Grand Kremlin Palace’s complex and is one of the oldest museums of Moscow, established in 1851. It showcases Russian history and displays many cherished relics. Definitely make sure to check out this museum while you’re here!

The Moscow Kremlin

The churches inside the Moscow Kremlin are the Cathedral of the Dormition, Church of the Archangel, Church of the Annunciation, and the bell tower of Ivan Veliki (a church tower).

The five-domed Cathedral of the Dormition is considered the most famous. It was built from 1475–1479 by an Italian architect and has served as a wedding and coronation place for great princes, tsars, and emperors of Russia. Church services are given in the Kremlin’s numerous cathedrals on a regular basis.

The Grand Kremlin Palace was the former Tsar’s Moscow residence and today it serves as the official workplace of the President of the Russian Federation (Vladimir Putin seems to have bagged that title for life) .

Insider Tip: The Kremlin is closed every Thursday! Make sure to plan this stop on your Moscow itinerary for any other day of the week!

Day 1 / Stop 3 – Lenin’s Mausoleum

  • Why it’s awesome: The mausoleum displays the preserved body of Soviet leader Vladimir Lenin .
  • Cost: Free!
  • Food nearby: Khinkal’naya is a charming Georgian restaurant with vaulted ceilings and exposed brick. It’s a popular place with locals and right next to the Red Square!

Lenin’s Mausoleum, also known as Lenin’s Tomb, is the modernist mausoleum for the revolutionary leader Vladimir Lenin. It’s located within the Red Square and serves as the resting place for the Soviet leader! His preserved body has been on public display since shortly after his death in 1924.

It’s located just a few steps away from the Kremlin Wall and is one of the most controversial yet popular Moscow attractions!

Admission is free for everyone, you’ll only need to pay if you need to check a bag. Before visitors are allowed to enter the mausoleum, they have to go through a metal detector first. No metal objects, liquids, or large bags are allowed in the mausoleum!

Lenins Mausoleum

Expect a line to enter the building, and while you’re inside the building, you’ll be constantly moving in line with other visitors. This means you won’t be able to spend as long as you’d like viewing the mausoleum, but you’ll still be able to get a good look. Pictures and filming while inside the building are strictly prohibited, and security guards will stop you if they see you breaking this rule.

The mausoleum is only open on Tuesday, Wednesday, Thursday, and Saturday – unless it’s a public holiday or a day scheduled for maintenance. The hours it’s open for each day are limited, make sure to check online before you visit to make sure you can fit this into your Moscow itinerary for that day!

Insider Tip: The Lenin’s Museum is there for people to pay their respect; remember to keep silent and move along quickly, it’s not intended for people to congregate around. Also, men are not allowed to wear hats and everyone must take their hands out of their pockets when inside the building.

Day 1 / Stop 4 – St. Basil’s Cathedral

  • Why it’s awesome: A dazzling designed cathedral that showcases Russia’s unique architecture. This cathedral is one of the most recognizable symbols of the country!
  • Cost: USD $8.00
  • Food nearby: Moskovskiy Chaynyy Klub is a cozy cafe serving food items and pipping hot tea; it’s the perfect place to go if you’re visiting Moscow during the winter months!

Located in the Red Square, the ornate 16th-century St. Basil’s Cathedral is probably the building you picture when you think of Moscow’s unique architecture. Its colorful onion-shaped domes tower over the Moscow skyline!

The cathedral was built from 1555-1561 by order of Tsar Ivan the Terrible. It was designed with an iconic onion dome facade and enchanting colors that captivate all who see it. Fun fact: If you’re wondering why Russian churches have onion domes, they are popularly believed to symbolize burning candles!

This iconic cathedral has become a symbol of Russia due to its distinguishing architecture and prominent position inside the Red Square. It’s one of the most beautiful, wonderful, and mesmerizing historical cathedrals in the world!

St. Basils Cathedral

The interior of the church surprises most people when they visit. In contrast to the large exterior, the inside is not so much one large area, but rather a collection of smaller areas, with many corridors and small rooms. There are 9 small chapels and one mausoleum grouped around a central tower.

Visiting the inside is like walking through a maze, there are even small signs all around the cathedral tracing where to walk, and pointing you in the right direction! The walls are meticulously decorated and painted with intricate floral designs and religious themes.

The church rarely holds service and is instead a museum open for the public to visit.

Insider Tip: During the summer months the line to go inside the cathedral can get quite long! Make sure to arrive early or reserve your tickets online to guarantee quick access into the cathedral!

Day 1 / Stop 5 – GUM Department Store

  • Why it’s awesome: This is Russia’s most famous shopping mall! It’s designed with elegant and opulent architecture and provides a real sense of nostalgia!
  • Cost: Free to enter
  • Food nearby: Stolovaya 57 is a cafeteria-style restaurant with a variety of inexpensive Russian cuisine menu items including soups, salads, meat dishes, and desserts. It’s also located inside the GUM department store, making it very easily accessible when you’re shopping!

The enormous GUM Department Store is located within the historic Red Square. It has a whimsical enchantment to it that sets it apart from your typical department store.

A massive domed glass ceiling lines the top of the building and fills the interior with natural sunlight. There are live plants and flowers placed throughout the mall that give the shopping complex a lively and cheerful feel! A playful fountain sits in the center, further adding to the malls inviting a sense of wonder and amusement!

The GUM department store opened on December 2, 1893. Today, it includes local and luxury stores, including Fendi, Louis Vuitton, Prada, and many more! There are numerous cafes, restaurants, and even a movie theater inside!

For a special treat, head into Gastronom 1. This 1950s-style shop sells gourmet food items, like wine, freshly-baked pastries, cheese, Russian chocolate, and of course, vodka! Also, be on the lookout for a bicycle pedaling ice cream truck with an employing selling ice cream!

The ambiance is simply amazing, a trip to this idyllic shopping mall is an absolute must on any Moscow itinerary!

Insider Tip: Make sure to carry some small change on you in case you need to use the restroom, you’ll need to pay 50 rubles – or about USD $0.80 to use the bathroom in GUM.

On your 2 day itinerary in Moscow, you’ll have a chance to use the city’s excellent public transportation service! You’ll explore a few more of Moscow’s historic highlight as well as some modern attractions. These sites are a little more spread out, but still very easily accessible thanks to the metro!

Day 2 / Stop 1 – Novodevichy Convent

  • Why it’s awesome: The Novodevichy Convent is rich in imperial Russian history and contains some of Russia’s best examples of classical architecture!
  • Cost: USD $5.00
  • Food nearby: Culinary Shop Karavaevs Brothers is a cozy and simple place to have a quick bite, they also have vegetarian options!

The Novodevichy Convent is the best-known and most popular cloister of Moscow. The convent complex is contained within high walls, and there are many attractions this site is known for! 

The six-pillared five-domed Smolensk Cathedral is the main attraction. It was built to resemble the Kremlin’s Assumption Cathedral and its facade boasts beautiful snowy white walls and a pristine golden onion dome as its centerpiece. It’s the oldest structure in the convent, built from 1524 -1525, and is situated in the center of the complex between the two entrance gates.

There are other churches inside the convent as well, all dating back from many centuries past. The convent is filled with an abundance of 16th and 17th-century religious artworks, including numerous large and extravagant frescos!

Novodevichy Convent

Just outside the convent’s grounds lies the Novodevichy Cemetery. Here, you can visit the graves of famous Russians, including esteemed authors, composers, and politicians. Probably the most intriguing gravestone belongs to Russian politician Nikita Khruschev!

The Novodevichy Convent is located near the Moscow River and offers a peaceful retreat from the busy city. In 2004, it was proclaimed a UNESCO World Heritage Site. The convent remains remarkably well-preserved and is an outstanding example of Moscow Baroque architecture! 

Insider Tip: To enter the cathedrals inside the complex, women are advised to cover their heads and shoulders, while men should wear long pants.

Day 2 / Stop 2 – Gorky Central Park of Culture and Leisure

  • Why it’s awesome: A large amusement area in the heart of the city offering many attractions!
  • Cost: Free! 
  • Food nearby: Check out Mepkato, located inside Gorky Central Park for a casual meal in a cozy setting. There are indoor and outdoor seating options and the restaurant is child-friendly!

Gorky Central Park of Culture and Leisure is a large green space in the heart of Moscow. The park opened in 1928, and it stretches along the scenic embankment of the Moskva River. It covers an area of 300-acres and offers a lovely contrast from the compact city center.

You’ll find all sorts of wonderful attractions, from boat rides to bike rentals to tennis courts and ping-pong tables, and much more! there are an open-air cinema and festive events and concerts scheduled in the summer months.  A wide selection of free fitness classes is also offered on a regular basis, including jogging, roller skating, and dancing!

Although many of the options you’ll find here are more suited for outdoor leisure during the summer, you’ll also a selection of winter attractions, including one of Europe’s largest ice rinks for ice-skating!

Gorky Central Park of Culture and Leisure

If you’re trying to decide what to do in Moscow with kids, the park also offers several venues designed specifically for kids. Check out the year-round Green School which offers hands-on classes in gardening and art! You can also feed the squirrels and birds at the Golitsinsky Ponds!

The park is very well maintained and kept clean and the entrance is free of charge, although most individual attractions cost money. There is also Wi-Fi available throughout the park.

With so many attractions, you could easily spend all day here! If you’re only planning a 2 day itinerary in Moscow, make sure to plan your time accordingly and map out all the areas you want to see beforehand!

Day 2 / Stop 3 – The State Tretyakov Gallery

  • Why it’s awesome: The gallery’s collection consists entirely of Russian art made by Russian artists!
  • Food nearby : Brothers Tretyakovs is located right across the street from the gallery. It’s a wonderfully atmospheric restaurant serving top quality food and drinks!

The State Tretyakov Gallery was founded in 1856 by influential merchant and collector Pavel Tretyakov.  The gallery is a national treasury of Russian fine art and one of the most important museums in Russia!

It houses the world’s best collection of Russian art and contains more than 130, 000 paintings, sculptures, and graphics! These works have been created throughout the centuries by generations of Russia’s most talented artists!

The State Tretyakov Gallery

The exhibits range from mysterious 12th-century images to politically charged canvases. The collection is rich and revealing and offers great insight into the history and attitudes of this long-suffering yet inspired people!

All pictures are also labeled in English. If you plan to take your time and see everything inside the museum it will take a good 3-4 hours, so make sure to plan your Moscow trip itinerary accordingly! This gallery is a must-see stop for art lovers, or anyone wanting to explore the local culture and history of Russia in a creative and insightful manner! 

Insider Tip: When planning your 2 days in Moscow itinerary, keep in mind that most museums in Moscow are closed on Mondays, this includes The State Tretyakov Gallery!

Day 2 / Stop 4 – All-Russian Exhibition Center

  • Why it’s awesome: This large exhibition center showcases the achievements of the Soviet Union in several different spheres. 
  • Food nearby: Varenichnaya No. 1 serves authentic and homestyle Russian cuisine in an intimate and casual setting.

The All-Russian Exhibition Center is a massive park that presents the glory of the Soviet era! It pays homage to the achievements of Soviet Russia with its many different sites found on the property.

The center was officially opened in 1939 to exhibit the achievements of the Soviet Union. It’s a huge complex of buildings and the largest exhibition center in Moscow. There are several exhibition halls dedicated to different achievements and every year there are more than one hundred and fifty specialized exhibitions!

The Peoples Friendship Fountain was constructed in 1954 and is a highlight of the park. The stunning gold fountain features 16 gilded statues of girls, each representing the former Soviet Union republics. 

The Stone Flower Fountain was also built in 1954 and is worth checking out. The centerpiece of this large fountain is a flower carved from stones from the Ural Mountains! Along the side of the fountain are various bronze sculptures.

You will find many people zipping around on rollerblades and bicycles across the large area that the venue covers. It’s also home to amusement rides and carousels, making it the perfect place to stop with kids on your Moscow itinerary! Make sure to wear comfortable shoes and allow a few hours to explore all the areas that interest you!

Day 2 / Stop 5 – Bolshoi Theater

The Bolshoi Theater is among the oldest and most renowned ballet and opera companies in the world! It also boasts the world’s biggest ballet company, with more than 200 dancers!

The theater has been rebuilt and renovated several times during its long history. In 2011 it finished its most recent renovation after an extensive six-year restoration that started in 2005. The renovation included an improvement in acoustics and the restoration of the original Imperial decor.

The Bolshoi Theater has put on many of the world’s most famous ballet acts! Tchaikovsky’s ballet Swan Lake premiered at the theater in 1877 and other notable performances of the Bolshoi repertoire include Tchaikovsky’s The Sleeping Beauty and The Nutcracker!

Today, when you visit the theater, you can expect a magical performance from skilled singers, dancers, and musicians with the highest level of technique!

The Alexander Garden

  • A tranquil place to relax near the Red Square

The Alexander Garden was one of the first urban public parks in Moscow! The garden premiered in 1821 and was built to celebrate Russia’s victory over Napoleon’s forces in 1812!

The park is beautiful and well maintained with paths to walk on and benches to rest on. The park contains three separate gardens: the upper garden, middle garden, and lower garden.

The Alexander Garden

Located in the upper garden, towards the main entrance to the park is the Tomb of the Unknown Soldier with its eternal flame. This monument was created in 1967 and contains the body of a soldier who fell during the Great Patriotic War!

The park stretches along all the length of the western Kremlin wall for about half a mile. Due to its central location in the city, it’ll be easily accessible when you’re out exploring The Red Square.

It provides a bit of relief from the city’s high-energy city streets. Bring a picnic lunch, go for a walk, or just sit and people watch, this is one of the best Moscow sites to wind-down and relax!

Ostankino Television Tower

  • Television and radio tower in Moscow
  • Currently the tallest free-standing structure in Europe
  • Make sure you bring your passport when you visit, you can’t go up without it!

For spectacular views of the city, make sure to add the Ostankino Television Tower to your itinerary for Moscow! This impressive free-standing structure provides stunning views of the city in every direction. The glass floor at the top also provides great alternative views of the city!

Travel outside the city center and discover a unique area of the city! The Izmaylovo District is a popular destination for locals and tourists alike, and one of the coolest places to see in Moscow! The two main attractions we recommend checking out are the Kremlin and the flea market.

The Izmailovo Kremlin was established as a cultural center and molded after traditional Russian architecture. This colorful complex is home to several single-subject museums, including a Russian folk art museum and a vodka museum!

Izmaylovo District

Next to the Kremlin is the Izmailovo open-air market, which dates back to the 17th century! The market is connected to the Izmailovo Kremlin by a wooden bridge. Pick up all your Russian souvenirs here, including traditional handicrafts, paintings, books, retro toys, and Soviet memorabilia!

You will find many hand-made and hand-painted options available at higher prices, as well as mass-produced souvenir options at lower prices!

  • The museum also includes a small cafe and burger shop

For something a little different, check out the Museum of Soviet Arcade Games! The museum features roughly 60 machines from the Soviet era, including video games, pinball machines, and collaborative hockey foosball! The machines inside the museum were produced in the USSR in the mid-1970s.

The museum also has a neat little screening room that plays old Soviet cartoons and an area with Soviet magazines! This unique attraction is a fun addition to a 3 day itinerary in Moscow, and an attraction that all ages will enjoy! 

Whether you’re spending one day in Moscow, or more, safety is an important thing to keep in mind when traveling to a big city! Overall, Moscow is a very safe place to visit. However, it is always recommended that tourists take certain precautions when traveling to a new destination!

The police in Moscow is extremely effective at making the city a safe place to visit and do their best to patrol all of the top Moscow, Russia tourist attractions. However, tourists can still be a target for pickpockets and scammers.

Moscow has a huge flow of tourists, therefore there is a risk for pickpocketing. Simple precautions will help eliminate your chances of being robbed. Stay vigilant, keep your items close to you at all times, and don’t flash your valuables!

If you’re planning a solo Moscow itinerary, you should have no need to worry, as the city is also considered safe for solo travelers, even women. Stay in the populated areas, try and not travel alone late at night, and never accept rides from strangers or taxis without a meter and correct signage.

The threat of natural disasters in Moscow is low, with the exception of severe winters when the temperature can dip below freezing! Bring a good, warm jacket if you visit in Winter.

However, please note that Russian views on homsexuality are far less accepting than those in Western Europe. Likewise, Non-Caucasian travellers may sadly encounter racism in Russia .

The staircase in the Oak Hall is a particular masterpiece; it was built without a single nail or screw. The fireplace is equally impressive and has been used as a meeting room by President Dmitry Medvedev. Guests can also hire additional rooms such as the Cigar Room and the Cabinet Room. A menu of authentic Russian cuisine has been created by top chef Alexander Popov, with organic dishes bursting with flavor and a splendor to match the opulent surroundings. With so much luxury and class on display, it’s little wonder that former US Presidents Ronald Reagan and George Bush have chosen to dine here. Situated in the center of the city between Bolshaya Nikitskaya 53 and Povarskaya Ulitsa 50, it’s worth booking ahead to avoid disappointment.

White Rabbit

With a domed window inviting soaring views of the Moscow cityscape, White Rabbit has recently undergone extensive renovations, to both its interior and its menu. Renowned architect Natalia Belonogova has transformed the restaurant into an airy, modern space, perfected by the addition of a summer veranda. To connect the dining options with the new interior, head chef Vladimir Mukhin has created a new menu, Metamorphoses, to reflect the lifecycle of the mayfly butterfly.

Delight your palette with scallop, strawberries and blackcurrant or, for dessert, dandelion honey with melted cottage cheese. This summerlike and refreshing menu has its roots in Russian soil and its head in the clouds above Moscow’s skyline.

    Jewelled rice recipe - Boil rice in a large saucepan of boiling water until par-cooked (5-7 minutes). Drain well. Heat 1 tbsp ghee in a small saucepan over medium heat. Add onion, season lightly with salt and stir until softened (10-12 minutes). Add spices and stir until fragrant, then add drained fruit and half the saffron water and stir to combine.
