7-Day Carnival Cruise Western Caribbean Our Itinerary [June 2023]

On June 3rd, we boarded the Carnival Vista to embark on our 7-day Western Caribbean Cruise. Our itinerary included the following ports of call: Roatan, Honduras, Belize, and Cozumel.

We set sail from Galveston, TX, and had decided to arrive in Galveston the previous day to have breakfast at our favorite restaurant Miller’s Seawall Grill .

Morning June 3rd, 2023 (Saturday)

After getting up and about the morning of the 3rd, we checked out of our room and headed to Millers. After a short wait of 45 minutes, we were seated. (PS: A 45-minute wait is short as Miller’s is quite popular, and wait times are usually longer.

We ordered mimosas and their famous Lump Crab Benedict. The Benedict is two over-easy eggs on top of our Lump Crab meat & grilled crab stuffing covered in a smooth Hollandaise Sauce and a side of hash browns.

Embarkation Day 1 (Saturday)

On our last cruise, Tammy scheduled us for an early embarkation, which didn’t leave us enough time to go to the Galveston seawall. On that cruise, we boarded and only had a slight delay boarding. It wasn’t terrible, but it was March, so there were probably fewer travelers.

This time Tammy scheduled us for a 1:30 PM boarding time. The lines were a lot longer this time around. The lines did move at a nice pace, but boarding did take longer than our previous cruise on the Carnival Cream, but there were more passengers, about 5,200, half of which were first-time cruisers.

Suffice it to say Carnival Cruise lines have their embarkation process down to perfection. Though others might have had delays onboarding, you should be fine if you have all your paperwork and your luggage is tagged correctly.

Upon boarding, we headed to the bar for our customary first drink and “muster.”

For those unfamiliar with what “muster” is, it is simply directions on what to do if there is an emergency on the boat, such as where to meet and how to strap your life vest. This used to be tedious before Covid, but now it is simple and takes 3 minutes.

We typically don’t do much on the first day of our cruise. Often we are tired from the previous day’s drive from Lake Texoma . The drive can be anywhere from six to eight hours. We went to our room on this cruise, then headed to dinner. We then returned to our room for a well-deserved night’s sleep.

Day 2 Fun at Sea (Sunday)

Getting to our first Port of Call (Roatan, Honduras) takes about two days, so Sunday was our first Fun Day at Sea.

I’m an early bird, so at around 7 AM, I went upstairs to the Lido Marketplace to have some coffee. The Lido Marketplace is buffet-style. It is open for breakfast, lunch, and dinner. On the Carnival Vista, it is located midship on the 10th-floor Lido deck.

This is the area where I’ll sit for an hour or two blogging, thanks to Carnival Cruise Line wifi .

Around mid-morning, we headed to the pool to relax, and people watch and have a few drinks. On this cruise, a free Cheers Package was included. The Cheers package allows you up to 15 drinks (spirits, wine, beer) and unlimited premium coffee, soda, etc.

Our Carnival Cruise agent instructed Tammy to buy her Cheers package after boarding. Here is the reason why.

You cannot buy the drink package for yourself if you are cruising with another adult. You are forced to buy the package for every adult in your room. Since I already had my Cheers Pacakge, Tammy had to go to Guest Services and get approval to buy her own after Carnival had confirmed I already had one.

Yes, it is a bit of an inconvenience, but for us, it’s not a big deal as I get offers for free Cheers Packages and a room all the time.

We hung out at the pool for most of the afternoon and met some friendly folks (Delaney, Roman, Elizabeth, and Mad Max, lol.)

In the evening, we went to the Havana Club Karaoke bar, where our new friends did some singing. Then off to the casino for an hour and straight to bed.

Day Three More Fun At Sea (Monday)

Day three of our Carnival Cruise is another Fun Day at Sea. We had lots of expectations for the day. Besides spending most of the afternoon in the pool,, we planned to partake in an 80s music show on the Lido Deck at 9:45 PM.

After the afternoon in the pool, we headed to our room to get some closed-toe shoes, as that is the only permitted footwear if you are going on the Skyride.

The Skyride is what I would call a pedal coaster. It’s pretty cool, but not as much fun as the BOLT seacoaster . We’ll be riding the BOLT next year on the Carnival Jubilee .

After riding the Skyride, we headed to our room to shower and prepare for dinner. We made a quick stop at the casino, then dinner.

After dinner, I convinced Tammy we should walk the ship for a bit, well, that walk cost us $480. One of our favorite adult beverages is Sheridan. Sheridan is a liqueur that was first introduced in 1994.

According to Wikipedia , it’s uniquely bottled, consisting of two separate sections, separated by glass, but fused together. One section is filled with a black liqueur consisting of coffee and whiskey flavors, while the other is filled with a white liqueur of milk white chocolate.

We bought two cases.

Day 3 Roatan Honduras (Tuesday)

Our first Port of Call was Roatan, Honduras. We disembarked around 10 am and headed straight to Mahogany Beach. You can walk to this free beach from the port area or ride a chair lift.

We opted for the chair lift. I’m glad we did; the chair lift view is pretty awesome.

Once on the ground, we headed to Fat Tuesday for a drink. I ordered a pina colada, and Tammy ordered a margarita. Both drinks were delicious. For $17, you get 32 ounces and a souvenir cup which we both agreed was a decent price.

We also ordered some food. The nachos serving was huge and were also delicious. Later in the day, I ordered the jerk chicken with plantain fries, which was also very good.

Once back onboard, we headed to the 12th deck to cheer on the passengers returning late to the ship. The side of the ship with a view of those boarding is usually lined with spectators. It’s a fun spectator sport.

Day 4 Belize

On day four of our 7-day Caribbean cruise, we arrive in Belize. The waters around the Belize port are shallow, so we have to tender from the ship to shore. The tender took 15 minutes and dropped us off at Terminal 2.

We didn’t plan any excursion for Belize and just strolled around the port until we found The Wet Lizard , a small restaurant where we decided to have lunch and a few drinks.

We sat at the bar, where Tammy ordered a pina colada, and I ordered a Belkin, which is the local beer.

Our food order consisted of the following:

  • Buffalo French Fries
  • Coconut Shrimp with Rice

Day 5 Cozumel

In Cozumel, we decide to do an All-Day inclusive at Mr. Sanchos, with our newly found friends Delanie and Roman. (Yes, his first name is my last name). Mr. Sanchos, as of the writing of this article, is just $68 per adult and includes unlimited food and drinks from their menu.

You get a table, chairs, beach recliners, and your very own server. Mr. Sanchos has several pools, two swim-up bars, a buffet restaurant, music, and more. It is one of our favorite places to go in Cozumel.

During this leg of the cruise, and fellow passenger had a medical emergency. We had already departed Cozumel but had to return to Cozumel (we were already 1 1/2 hours from Cozumel) so the passenger could receive medical treatment.

This created a 3-hour delay.

Day 6 Fun At Sea

On day 6 of our cruise, we thought we would rest in our cabin. It turns out we didn’t. We ended up at the casino for several hours, then the Lido deck pool for the remainder of the day.

Dinner consisted of lobster.

Day 7 Galveston Disembark

As I mentioned earlier our fellow passengers’ medical emergency added 3 hours to our trip. We hoped the time would be made up during Day 6, but we didn’t.

We arrived in Galveston at 10:30 AM instead of the scheduled 8 AM. Due to the next cruise leaving the same day we arrived, we had to leave our room at 8 AM so they could start cleaning. We sat on the 4th deck from 8 AM until we disembarked at around 1:30 PM.

Note: We have been on many Carnival Cruises, and the delay on this cruise has never happened to us before. Carnival runs a tight ship (pun intended), keeping to their schedule; however, passenger safety is critical and takes precedence over schedule.

The best culinary cruises to book in 2024.

F or many, food is the best part of travel—and I can relate. I've taken cruises all over the world, and they've led to many culinary firsts for me: My first-ever lobster was on a Caribbean cruise when I was just a teenager, my first bite of reindeer came in a cozy bowl of chili during an Alaskan cruise, and my first (and last!) time eating escargot happened on a cruise in the Mediterranean. While these dishes were all parts of the all-inclusive menus on my cruises, I decided to kick things up a notch on the foodie scale by hopping on board the growing trend of special culinary cruises, which feature food and wine in a variety of special ways. These days, you’ll find the best cruises partnering with celebrity chefs, featuring specialty-dining venues and offering excursions filled with meals you’ll dream about long after you return home.

"I helped start the first culinary-themed cruises in the early '90s when I began noticing interest, and today this concept is more popular than ever," says Executive Chef Rudi Sodamin, head of culinary arts on Princess Cruises and Master Chef for the Holland America Line. "Experiential food and beverage experiences are often some of our most popular activities on board. It is my goal to surprise and delight guests while also educating them and meeting their every gastronomical desire."

I’ve been on my fair share of these cruises, including a recent one to the Mediterranean, and trust me when I say these trips may just become your favorites of all time .

Best for Napa Valley wine pairings

Princess 7-day pacific wine country cruise.

If you love Napa by land , you'll love it even more by sea, and it's now an experience you can have on any Princess Cruises ship sailing North American itineraries. In spring 2023, the cruise line partnered with Wagner Family Vineyards (the producers of Caymus wines), a leader in Napa Valley cabernet, for its five-course Caymus Vineyards Winemaker Dinner. Held two or three times per cruise, it features a dinner for up to 12 guests that could very well be the highlight of their entire vacation. On a recent sailing, which started in Vancouver, British Columbia, and wended its way through San Francisco and Los Angeles, the food was fresh and sophisticated—and tailored to guests’ dietary preferences as needed.

The Winemaker Dinner menu consisted of an amuse-bouche (beef carpaccio or marinated fresh oyster mushrooms), a first course (fresh summer black truffle risotto with 36-month-aged Parmigiano Reggiano), main course (prime beef tenderloin with blossom artichokes or seared king salmon with giant prawn), cheese course and dessert (a beautiful chocolate raspberry creation). Oh, and each course was perfectly paired with the appropriate Wagner wine—including cabernet sauvignon, pinot noir and sparkling wine—hand-selected by Chuck Wagner, the owner and winemaker of Caymus Vineyards.

It takes a talented team to pull off an epic meal like that as well as the other offerings on board. "At Princess, we have such a diverse group of chefs, which is a huge benefit to us, as we are able to use their expertise to introduce authentic flavors from all over the world," says Sodamin. "I present food as art—to be created with passion and served with love."

Fans of Iron Chef Masaharu Morimoto now have another way to experience his Japanese cuisine beyond his various restaurants around the world: on board the Nieuw Amsterdam . Holland America debuted Morimoto by Sea on Dec. 16, 2023, offering Asian-inspired dishes and beverages from Chef Morimoto, the cruise line's "Global Fresh Fish Ambassador." On this Caribbean cruise , you'll dine on appetizers such as sticky ribs, hamachi tacos, Morimoto fresh-tuna pizza and a sushi plate. Main courses include crispy fried whole-market fresh fish, angry lobster pad Thai, Japanese vegetable curry, and a surf-and-turf with wasabi-mayo lobster and grilled Wagyu kalbi. Watch for pop-up Morimoto by Sea events once per cruise on the fleet's other 10 ships too.

The France-based S.S. Bon Voyage is the perfect choice for food and wine–loving cruisers: This Uniworld river cruise is basically a floating boutique hotel designed to immerse guests in French culture and wine. The Southwest France itinerary features the country's beautiful landscapes, wines and culture in Fort Médoc, Cadillac, Blaye and Libourne. On board, head to La Cave des Vins, a specialty dining venue that features a communal table in a private dining room where guests will experience a cooking demonstration and culinary experience that captures the essence of France .

Windstar is the official cruise line of the James Beard Foundation (JBF), the nonprofit culinary arts organization that celebrates, supports and elevates the people behind America's food culture. The Foundation firmly aligns with Windstar's commitment to fresh and local epicurean experiences around the world, as well as efforts to reduce food waste. Join Chef Tanya Holland—this Top Chef Season 15 contestant is known for her inventive take on soul food and was the host and soul food expert on Food Network's Melting Pot—on a 10-day cruise focused on the cuisine and cultures of Spain , Portugal and France. Windstar culinary cruises include a chef-hosted dinner with wine pairing, two cooking demonstrations (with recipes you'll take home!) and a market tour with the chef.

No matter what flavors you're craving—we're talking pizza by the slice, sushi, caviar, oysters, burgers and tacos—you can find it on board.

Royal Caribbean is introducing several firsts on this ship, including the Empire Supper Club, an eight-course journey of traditional American fare (think: Wagyu New York strip steak topped with fresh-shaved truffle) that's perfectly paired with live jazz music. Other newcomers are the AquaDome Market, the line's first food hall with five dining options; a milkshake bar called Desserted; and the Celebration Table, a private 12-seat dining experience with family-style service perfect for commemorating a milestone. In the evenings, grab a cocktail at Dueling Pianos (a first of its kind in the fleet, with battling baby grands), a glass of prosecco at the new walk-up champagne bar Bubbles or a pint at English pub Point & Feather.

Crystal is already known for its high-end and award-winning culinary experiences—and now it's brought one of the most legendary chefs in the world on board. Behold Umi Uma, a restaurant created by Master Chef Nobuyuki (Nobu) Matsuhisa for Crystal's Serenity and Symphony ships. This innovative Japanese-Peruvian fusion cuisine features delectable dishes like a crispy rice cake with spicy tuna tartare, Nobu-style lobster tacos, grilled Australian Wagyu beef fillet steak and Nobu-style black cod. Or choose the Sushi with Connoisseur, which features various sushi, sashimi and rolls.

Some people take cruises for the at-sea experience; others use it as a mode of transportation to get where they want to go. While every minute on board a Viking ship is spectacular, the real magic happens off the ship on this Western Mediterranean itinerary through Spain, France, Monaco and Italy. Because the Viking Saturn is a small ship (930 guests), it can dock overnight in some ports, which means you can enjoy authentic dinners and nightcaps in town.

On this particular cruise, you'll have that experience in Barcelona (paella and a flamenco show, anyone?) and again in Florence (you're in the famous Tuscan wine region, so have a glass or two of Chianti with your pasta). Great meals and wine are a part of any Celebrity sailing—it was voted best cruise line for food and dining by Cruiseline's Member Choice Awards in 2022 and holds an Award of Excellence from Wine Spectator for 2023. Each ship has myriad complimentary dining venues inspired by global and regional flavors, alongside specialty restaurants ranging from seafood and oyster bars to Paris-style bistros. And at the helm sits Celebrity's Global Culinary Ambassador, Chef Daniel Boulud, who holds many culinary accolades from the James Beard Foundation, as well as multiple Michelin stars.

His onboard restaurant, Le Voyage by Daniel Boulud, features a menu that gives guests a taste of the places that have inspired him around the world, such as 5-Spice Duck Pithivier, Brazilian Moqueca and Risotto au Homard. He has also designed signature dishes for Luminae, the cruise line's private dining experience included for all guests of The Retreat. (Guests who book these suites have access to premium amenities, such as free drinks and Wi-Fi and access to a private sundeck and lounge.)

  • Celebrity Ascent is the fleet's brand-new ship (it debuted Dec. 3, 2023), and it's the most innovative in the Edge series.
  • There are 32 distinctive restaurants, bars and lounges on board—including 14 cafes/bars/lounges, eight specialty restaurants, four main dining restaurants, four complimentary casual dining venues and two exclusive restaurants.
  • This itinerary hits some of the most fantastic foodie cities in Europe: Barcelona and Valencia, Spain; Nice, France; and Portofino, Florence and Rome, Italy .

Best for vegan food

Carnival cruises.

Calling all plant-based diners who love to cruise: A new vegan menu is currently available on Carnival Freedom in Port Canaveral, Florida, and Car nival Horizon in Port Miami—and will soon be implemented fleet-wide in a phased approach. Carnival chefs created recipes for each of their dishes to be prepared without the use of animal products, and the proteins included are made from meat substitutes. Look for tempting options such as Hawaiian Salmon Poke made with plant-based salmon, Spaghetti Carbonara with vegan bacon, Grilled Tofu Steak, and Eggplant Cutlet a la Parmigiana. For dessert, try the Cappuccino Pot de Crème or Key Lime Velvet Cake. Off the ship, the Caribbean is no stranger to plant-based foods, from rice and beans to perfectly ripe tropical fruits, so you'll have plenty of options there too.

  • One of the most affordable cruise lines , with four-day Bahamas cruises starting under $250 per person.
  • Meat eaters shouldn't miss celebrity chef Guy Fieri's mouthwatering burgers at Guy's Burger Joint.

Four MSC Ships Will Cruise from North America next Summer

MSC Cruises just announced what their summer cruising season in 2025 will be like. Four ships, including the upcoming MSC World America, will take passengers on 3- to 7-night itineraries that will tour Florida, the Bahamas, the Caribbean, and Bermuda.

Let’s break it down by ship.

MSC World America: Caribbean, Ocean Cay

MSC World America will be ready for an April 2025 inaugural season. The cruise line’s biggest US-based vessel will take passengers on 7-night itineraries from PortMiami.

Guests can get acquainted with popular eastern and western Caribbean destinations like Puerto Plata, Dominican Republic; San Juan, Puerto Rico; Isla de Roatan, Honduras; Costa Maya and Cozumel, Mexico; and the cruise line’s private resort in the Bahamas Ocean Cay.

Also sailing from the new terminal in PortMiami, MSC Seascape offers 7-night eastern and western Caribbean sailings with shorter 3- and 4-night voyages to Ocean Cay and The Bahamas. Some shorter itineraries will spend a night at Ocean Cay, offering passengers more time to enjoy its exclusive amenities. 

MSC added that it will be the first time a Seaside EVO-class vessel will be deployed on short itineraries from Miami.

The 2017-built ship will sail from New York City and explore Port Canaveral, Nassau, and Ocean Cay for 7 nights. Meanwhile 6- and 7-night trips will sail to Bermuda’s pink sand beaches.

MSC Seashore: The Bahamas, Ocean Cay, and Mexico

Designed for warmer climates, MSC Seashore offers 3-, 4-, and 7-night escapes to The Bahamas from Port Canaveral. A few of the 7-night sailings will spend 2 days at Ocean Cay before moving on to Mexico’s Costa Maya and Cozumel.

Most of the cruise line’s summer voyages in 2025 are a week long, but there are still enough options for passengers looking for shorter cruises. The upcoming season offers opportunities to experience MSC’s new PortMiami terminal and the mega ship MSC World America .
