Five Weeknight Dishes

Hello! Mia here, filling in today for Emily Weinstein, who is on hiatus for the next few weeks.

I begin with a cautionary tale. Not too long ago, I couldn’t open my overstuffed freezer drawers because a chunk of ice had frozen everything in place. Emptying the freezer to melt this ice monster was a humbling experience — so many proteins to “use another day,” still unused and now freezer burned, not to mention multiples of items because I’d forgotten, say, that I already had two giant bags of shelled walnuts.

I’ve since vowed to open and scan my freezer as much as I do my fridge, so today’s batch of weeknight recipes is dedicated to the freezer staples that wait so patiently for you. (And if the description of my freezer made your head hurt, please use this tour of deputy editor Genevieve Ko’s freezer as a moment of zen.)

1. West Indian Kedgeree (Coconut Curry Rice With Cod)

This gorgeous, aromatic bowl of goodness is a perfect example of why I always keep white fish fillets in my freezer. Once my fish is defrosted, Ashley Lonsdale’s recipe comes together quickly with pantry and fridge all-stars: rice, curry powder, coconut milk, eggs. Don’t skip the red onions! The pop of purple against the golden rice is pretty, yes, but the bit of bite they add makes the dish sing.

2. Tamarind Chicken Stir-Fry

My mom taught me the trick of sticking beef in the freezer until it firms up a bit so that you can easily slice it thinly for dishes like shabu shabu and gyudon , and I do just that in reverse with chicken breasts for stir-fries. While your chicken is still pretty firm and not quite fully defrosted, cut it into uniform slices or pieces for Amelia Rampe’s bright and easy dinner. That way you have chicken that cooks quickly, evenly and, if you go the slices route, has more surface area for that tangy tamarind sauce.

3. Spicy Shrimp Patties

Sometimes, in the defrosting process, my shrimp come out looking … not their best. Detached tails, slightly smushed bodies, the bottom half of a torso with the upper half mysteriously missing. You know what hides all that? These spicy, savory shrimp patties from Zainab Shah, warm with chile powder, cumin, garam masala, ginger and garlic. And with the mint starting to droop in my fridge: mint chutney !

4. Broccoli-Walnut Pesto Pasta

My family refers to this as “that broccoli pasta” because, 1. I make it so often, and 2. It turns two hefty crowns of broccoli into a velvety sauce that’s balanced with cheese (umami) and lemon (brightness). I always have walnuts in my freezer — they’re so deliciously earthy and buttery, and they look like little brains — so I’m always just a bag of broccoli away from Genevieve Ko’s weeknight wonder.

5. Sheet-Pan Roasted Salmon With Pea Pesto

Speaking of pesto — and freezer staples — pea pesto! Dan Pelosi’s recipe turns sweet peas into an herby, nubbly green condiment for spooning on quick-roasted salmon and potatoes. If I didn’t feel like turning on the oven, would I skip the salmon and potatoes entirely and instead toss the pea pesto with pasta or slather it on toast, maybe with a fried egg on the side? Yes, yes I would.
